Growing up in Leichhardt, I learned my way around a pasta sauce. This dish is a simple blend of roast veg, with ricotta, butter beans and basil. Not traditional Italian but it'll get your approval. Vibrant and sweet, its perfect for summer with flavour and plenty of veg to keep you nourished.
Buy the sauce by itself, or with pasta and trimmings. Add the lemon and herb chicken for for more protein and flavour.

Serving/Storage Instructions
Cook the pasta
Bring a pot of salted water to the boil.
Add the pasta and cook for 8–10 minutes (or until al dente).
Drain, but keep a spoonful of the cooking water.
Heat the pasta sauce
Remove from the bag and place in a microwave-safe bowl.
Heat on high for 3 minutes, or until hot all the way through, stirring halfway.
Mix it up
Toss the hot pasta with the sauce and chicken.
Add a splash of the reserved pasta water if you want it extra silky.
Finish & serve
Sprinkle over the parmesan cheese, crack a little pepper on top, and dig in. If you have a lemon, give it a squeeze for extra zest.
Keep it Chill
Store in the fridge and use within 3 days
