Serving/Storage Instructions

Make the coconut rice

Rinse the rice under cold water until mostly clear.

For one serving, add 60gr rice, 60ml coconut milk, and 90ml water to a small pot.

Bring to a gentle boil, then cover and simmer on low for 12 minutes.

Turn off the heat, leave covered for a couple minutes, then fluff with a fork.

Heat the jerk chicken

Remove from the vacuum bag and place in a microwave-safe dish.

Heat on high for 3–4 minutes, or until hot all the way through, stirring halfway.

Prep the salad

Dice the tomato, cucumber, and onion into small chunks.

Toss together with a pinch of salt, a drizzle of olive oil, and a squeeze of lemon or lime if you like.

Serve it up

Spoon out your coconut rice, top with the hot jerk chicken, and add the fresh salad on the side.

Warm, spicy, fresh — all the good stuff in one plate.
